Summer Peach Crumble

Summer dessert made without dairy, refined sugar or gluten.

Ingredients: 

Filling:

800 g stoned and chopped peaches
100 ml of honey
1 tsp of vanilla extract

Crumble topping:

200 g of Almond Flour 
200 g of oats or Muesli Base
5 tbsp of melted coconut oil
100 ml of honey
1 tsp of vanilla extract

Method:

Preheat the oven to 200C.

To make the filling, cook the peaches in a saucepan over medium to low heat with the honey and vanilla extract.

For the crumble topping, in a mixing bowl, add the almond flouroatcoconut oilhoney, and vanilla and mix thoroughly.

Once the filling is nice and soft, add to an ovenproof dish and top with the crumble.

Bake for 20 minutes until the topping begins to brown.

Coconut yogurt or vegan vanilla ice cream, to serve.
